Mango Salad

This is one of my favourite salads! Even better the next day!

Ingredients:

1 mango
1 red pepper
1/2 tbsp. olive oil
1 tbsp. fresh parsley
1 tsp. balsamic vinegar
Salt & Pepper to taste

Preparation:

Slice mango and pepper into very thin slices.  Mix all the ingredients and serve! It is that easy!
