One Pot Pasta


1 tbsp. olive oil
2 small onions, diced
1/4 tsp. garlic powder
1 cup grape tomatoes, cut in half
8oz. sliced mushrooms
2 cups stock
1/2 tsp. dried oregano
8oz. pasta
1/2 tsp. salt
5oz. fresh spinach


Heat a large saucepan over medium-high heat.  Add onion and garlic to pan; sauté 3 minutes or until onion softens. Add tomatoes, mushrooms, stock, oregano, and pasta. Bring to a boil. Stir to submerge pasta in liquid. Cover, reduce heat to medium-low, and cook 7 minutes or until pasta is almost done. Uncover; stir in salt. Add spinach in batches, stirring until spinach wilts. Remove from heat; let stand 5 minutes.
