Cod Roll – Torta de Bacalhau


1 onion, diced
2 garlic cloves
3 tbsp. Olive oil
4 tbsp.flour
1 tsp. baking soda
250 ml. milk
200 gr. cod fish, desalted, boiled and flaked
1 tsp. salt
1 tsp. pepper sauce
1 tbsp. dried parsley
4 eggs, separated


Preheat oven to 350ºF. Line a cookie sheet with parchment paper, grease both cookie sheet and paper. In a frying pan, heat olive oil and cook  onion until  translucent. Mix the flour with the baking soda and add it to the onion, slowly add the milk, stirring constantly.  Add the cod and stir until well combined. Remove from heat, add salt, pepper and parsley. Stir in egg yolks.  In a separate bowl, beat egg whites until fluffy and carefully add to cod mixture. Pour the mixture in the cookie sheet and bake it for 25 minutes. Remove from oven and flip it onto a tea towel.  Carefully roll it just as you would a swiss roll.  Serve warm or cold.
