Sausage, Peas & Eggs

This dish is one of my favourites.  You can replace the green peas with green beans and french cut green beans.  It is quick and easy! I find it that it tastes better the day after for lunch!


2 Portuguese sausages, cut into rounds
6 eggs
1 small bag of frozen peas
2 tbsp. oil
1 tbsp. pepper sauce, or to taste
1 small onion, minced
2 garlic cloves, minced
1 bay leaf
2 tsp. paprika
1L of water
Dash of salt


In a large pan, heat the oil, add the onion and cook until translucent.  Add garlic, pepper, paprika and salt, cook for 2 minutes.  Add sausage and saute for approximately 3-4 minutes. Add peas, cook until peas thaw, stirring occasionally, add water and bay leaf.  Bring to a boil. Crack the eggs in the pot one by one, continue to cook for another 10 minutes, until eggs are cooked.  Serve with crusty bread.  Enjoy.
