Kale & Quinoa Salad

Ingredients:

1 kale, washed and cut into bit size pieces
1/2 cup quinoa, cooked
1/4 cup dried cranberries
1/4 cup sunflower seeds

Dressing:

2 tbsp. olive oil
1 tbsp. lemon juice
1 tsp. honey
Salt & pepper

Preparation:

In a small bowl, prepare the dressing.  Toss all ingredients in a bowl and enjoy.  For better flavour, prepare the salad a couple of hours ahead of time.
