2 cups of steel cut oats
2 cups of liquid
1 cinnamon stick
1 tbsp. of coconut oil (or any oil you prefer)
1 tbsp. of maple syrup
Shredded coconut for dredging
Coconut oil for frying
The night before, heat the coconut oil in a small pot, add the oats and let them toast for a few minutes. Add liquid, maple syrup and cinnamon stick. Let it boil for 5 minutes. Grease an 8×8 pyrex and pour oats, remove cinnamon stick. Cover and leave it overnight, do not refrigerate.
The next morning, cut into squares or triangles, dip in shredded coconut and fry. Top it with your favourite fruit, drizzle with maple syrup and sprinkle some cinnamon on top.
