Overnight Fried Oatmeal

This is a nice change to breakfast.  You can make it healthy or add a side of bacon and eggs for a not so healthy but delicious breakfast.  This recipe is very versatile and simple. However, it needs to be prepared the night before.
The recipe below is enough for 4 people or for 2 people for 2 different days.  I usually fry 2 portions on Sunday for breakfast and the other 2 portions we have on Monday morning just as oatmeal, we just add some more liquid to it and warm it up in the microwave or stove top.  You can increase or decrease this recipe by simply using equal parts liquid and steel cut oats.  You can also use any liquid, ie: water, milk, coconut milk, etc.
If you do not like coconut, feel free to omit it and use any other oil for frying.  You can fry the oatmeal without dipping it in coconut.


2 cups of steel cut oats
2 cups of liquid
1 cinnamon stick
1 tbsp. of coconut oil (or any oil you prefer)
1 tbsp. of maple syrup
Shredded coconut for dredging
Coconut oil for frying


The night before, heat the coconut oil in a small pot, add the oats and let them toast for a few minutes.  Add liquid, maple syrup and cinnamon stick.  Let it boil for 5 minutes. Grease an 8×8 pyrex and pour oats, remove cinnamon stick.  Cover and leave it overnight, do not refrigerate.

The next morning, cut into squares or triangles, dip in shredded coconut and fry.  Top it with your favourite fruit, drizzle with maple syrup and sprinkle some cinnamon on top.
