Cod “Gomes de Sá” Style – Bacalhau Gomes de Sá


350 gr. Salted cod* cooked, deboned and cleaned
700 gr. Potatoes, boiled whole and sliced
3 eggs, hardboiled and sliced
1 onion, sliced
2 garlic cloves, minced
3 tbsp. Olive oil
Black Olives, to taste
Parsley to garnish

 *The salted cod needs to be soaked in water for at least 24 hours, with frequent water changes.


Heat 2 tbsp. of olive oil in a dutch oven, add the onion and cook until translucent, add garlic, cook for another minute.  Add cod and stir, cook for 2 minutes.  Add eggs, reserve some egg slices for garnishing.  Add sliced potatoes, stir carefully so not to break the potatoes and eggs.   Stir in the rest of the olive oil.  Transfer to a serving dish and garnish with olives, egg and parsley.
