Papas – Portuguese Porridge

Papas is comfort food.  I know my mother cooked but I don’t remember any of her cooking except for papas.  There are different variations of this recipe, sometime my mom would make it with rice, sometimes with cornstarch and sometimes, she would put an egg yolk in the centre of the plate and pour the boiling porridge over it.  This recipe is just for the basic papas for one serving.


1.5 cup milk
2.5 tbsp. flour
2.5 tbsp. sugar
Dash of salt
Cinnamon for sprinkling


Bring one cup of milk to  a boil.  In a small bowl, mix flour, salt and sugar, pour in the remaining milk and whisk until smooth.  Once the milk in the saucepan comes to a boil, whisk in the flour mixture and return to boil again, stirring constantly. Once it comes to a boil, cook for 2 minutes, stirring constantly. Transfer to a plate and sprinkle with cinnamon.
