Cod Brás Style – Bacalhau a Brás


350 gr. cod, soaked overnight
8 potatoes
1 onion, thinly sliced
2 cloves garlic, minced
1/8 cup olive oil
1 tbsp. pepper sauce
4 eggs lightly beaten*
1/2 cup small black olives


Bring a pot of water to a boil and add cod, reduce heat and cook for 5 minutes.  Set aside to cool.  When the cod is cool enough to handle, debone it and remove skin, break apart the bigger pieces.  Peel potatoes and cut it match stick shape, deep fry just as for french fries.  Drain on paper towels and reserve.  Heat olive oil in a dutch oven, add onion thinly sliced, cook until translucent, add garlic and cook for another minute.  Stir in pepper sauce.  Add cod and cook for 2 minutes.  Add fried potatoes and mix.  Reduce heat and pour lightly beaten egg over everything, cover and  simmer until the egg is cooked, stirring occasionally so that it does not stick.  Add olives.

*Traditionally, the egg is added to the cod mixture uncooked.  I like to cook the eggs, scrambled and add it to the cod mixture.
