Portuguese Sweet Rice

Ingredients:

1 cup arborio rice
1 cup white sugar
2 1/2 cups milk
2 cups water
4 tbsp. butter
1 lemon, zest
1/2 tsp. salt
Cinnamon for decorating

Preparation:

In a dutch oven, combine rice, milk, water, butter, lemon zest and salt. Bring to a boil stirring occasionally.  When the milk starts to boil, reduce the heat to minimum and continue cooking.  When the rice is almost cooked or almost all liquid is absorbed, add condensed milk and stir. Continue cooking and stirring occasionally.  Once the rice is cooked, remove from heat and add lemon instant pudding, stirring quickly.  Transfer rice to a serving bowl and decorate with cinnamon.  Enjoy!
