Codfish in the oven

The Portuguese are very fond of codfish, especially salted cod. This recipe is traditionally cooked with salted cod but I only had fresh cod at home. Salted cod will need to be soaked overnight to remove the salt. Adjust salt in the recipe accordingly.

Ingredients:

2 fresh cod fillets, cut in half
4 – 6 small potatoes, quartered
1 onion, in half moon slices
1 tomato, in half moon slices
1/2 red pepper, in half moon slices
1/2 yellow pepper, in half moon slices
1/2 cup olives
3 garlic cloves, sliced
1/2 cup dry white wine
1/2 cup olive oil
2 tbsp. pepper sauce
2 tsp. salt
2 tsp. paprika

Preparation:

Preheat oven to 400ºF. In a small bowl, mix wine, olive oil, salt, pepper sauce and paprika. Set aside. In a roasting pan, mix potatoes, onion, tomato, peppers, olives and garlic. Arrange cod pieces on top. Drizzle the wet mixture over everything. Cover with foil and cook for 45 minutes. Remove foil, scooping some of the juices, baste potatoes and cod.  Cook for an additional 15 minutes uncovered.
