Freezer To Oven Mac ‘n’ Cheese

I like to make this in small batches and freeze. It is good for a quick lunch or as a side dish!

Ingredients:

1 pound pasta of choice
1/2 tsp. salt
freshly ground black pepper to taste
3 tablespoons butter
3 tablespoons flour
3 cups milk
3 cups grated cheese of choice

Preparation:

Place a large pot of water over high heat and bring it to a boil. Once the water is boiling, add salt and the pasta, and cook al dente, according to package directions.

In a medium-size skillet over medium melt the butter. When the butter is melted, add the flour and cook about a minute. Whisk in the milk, season with ground black pepper, and bring up to a bubble stirring constantly. Remove from heat and stir in the cheese in a figure-eight motion until it’s all melted.

Drain the pasta and combine with sauce. Pour into baking dish and place under the broiler to brown the cheese.

If freezing: Cover with plastic film when at room temperature and freeze.  When ready to eat, either remove from freezer to thaw, then cook according to instructions above or cook covered from frozen in at 350º for an hour and uncovered for 15 minutes, you may use the broiler in the last 15 minutes to toast the cheese.
